The family history begins in 1520 with Jean Carillon as a winegrower in these lands. Since then, the lineage has maintained an intimate relationship with the vine, generation after generation. The current Domaine François Carillon was born in 2010, when François - after years of working alongside his father Louis and a subsequent split with his brother Jacques - decided to put his personal stamp on this illustrious family name.
His vision is clear: to interpret the Puligny Montrachet terroir with the utmost precision, seeking pure, vibrant and deeply Burgundian wines. His motto, "between passion and precision", sums up his approach: sustainable viticulture and rigorous winemaking, always at the service of the wine.
Living vineyards, true wines
François Carillon covers some 16 hectares spread between Puligny Montrachet, Chassagne Montrachet and Saint Aubin, with parcels including Premier Cru such as Les Perrières, Folatières, Champs-Gain and Les Combettes. Each soil - from limestone and marl to gravel and sand - indelibly marks the character of the wine, and François seeks to express that imprint without distortion.
The planting density is high (≈ 10,000 vines/ha), forcing the roots to go deep. No herbicides are used; tilling is done with horses and organic compost is used. This respect for the natural balance of the vineyard is essential to obtain healthy, concentrated and energetic grapes.
Winery without dogmas, only precision
In the winery, intervention is minimal but meticulous. Pneumatic pressing is gentle, fermentation takes place in barrels (with a maximum of 10-15% new oak even in the best crus), and ageing takes place on the lees for 12 months. Then, a rest of about 6 months in stainless steel tanks allows the wine to refine before bottling.
The result is taut, clean white Burgundy wines with precise acidity, silky texture and a mineral background that clearly reflects the character of each parcel. There is no room for fashions or dogmas: only for terroir.
