Description
The story of François Carillon is that of a Burgundian heritage sensitively reclaimed. His winery in Puligny Montrachet represents the continuity of a wine-growing family since the 16th century, but also an elegant break: the desire to give the vineyard back its place above technique. On the Champ-Gain plot - 2 hectares on clay-limestone soil - François decided to intervene as little as possible, letting the slow ripening and the soil speak clearly. Here there is only Chardonnay, grown at moderate altitude, where the breezes preserve freshness and the sun ensures concentration. An anecdote illustrates his philosophy: after a summer storm, instead of harvesting immediately, he waited key days to reach a purer ripeness, risking part of the harvest for a more precise expression of the terroir.
Winemaking
The François Carillon Puligny Montrachet 1er Cru Champ-Gain is harvested by hand, with strict selection of bunches. Pneumatic pressing is slow and precise. After a gentle racking, fermentation starts with indigenous yeasts in 350-litre barrels (used to avoid over-expression of the wood). Ageing lasts several months on fine lees, with discreet bâtonnage, maintaining tension and texture. Bottling, without aggressive filtering, aims to preserve the identity of the plot and the authentic expression as much as possible.
Taste
On the nose, François Carillon Puligny Montrachet 1er Cru Champ-Gain displays notes of lime, fresh pear, green apple and a background of wet stone. The palate is precise, with a mineral and citrus attack: lemon, pink grapefruit, lime peel. The mid-palate is silky in texture, with vibrant acidity. The finish is long, with salinity, echoes of bitter almond and herbal freshness (fennel, verbena). The minerality marks the entire length. An elegantly austere Puligny Montrachet 1er Cru that rewards the attentive palate and suggests a long life in bottle.
