Envínate is a project born from the combination of oenological consultancy and the production of their own wines on the premises of some of their clients. Those who saw the birth of this winery not only served as researchers, but also their passion for creation led them to enter fully into the world of wines and their ageing.
The most relevant thing about those who lead this project is that they have become pioneers of a new way of making this type of beverage in Spain. They are characterised by being advocates of fresh and Atlantic wines, where they also put great effort in showing and enhancing the local varieties.
Let's talk about their history
Envínate is a project that started in Taganana, in the north-east of the island. At the beginning they only worked with very old vineyards, but with hundreds of varieties of wine that are blended under the brand name Táganan.
Two entry-level wines are made here, one in white and one in red. You can also get extreme and centenary wines from the winemaker José Ángel Alonso.
All of them have characteristic elements that define them as wild, as they have nuances and aromas of the forest, damp earth and wild fruits. However, they also have aspects that characterise them as fresh, deep and persistent wines on the palate, but not very structured. All of these are marked elements of the volcanic soils.
Since 2016 these wines have been produced in an old winery located at an altitude of 1,000 metres above sea level, nowadays working as gobelet vineyards. The characteristic wine of this area is a red wine called Benje.
Currently, they have teamed up with three winegrowers in La Orotava, resulting in the production of a white wine from a plot in La Piñera, which stands out among the other varieties, as it is a shady and cool area that produces vertical wines, and a red wine made with black listan in braided cordon.
Techniques used
Envínate has a particular philosophy in the elaboration of its wines, and that is that its work is carried out in singular vineyards where the elaboration techniques are adapted to the characteristics of the vintage. So this determines the elements that differentiate each wine, regardless of the year, being able to obtain varieties with or without the use of stems, differences in the quantities of this element and changes in the elaboration.
In the fermentation process, indigenous yeasts are used and a particular reductive technique is applied. No racking is used after malolactic fermentation, thus protecting the wine with carbon dioxide. This is the reason why these varieties can feel reduced when uncorked.
The ageing process is carried out in barrels from 228 to 600 litres in order to make the touch and nuance of the wood evident. Sulphur is used in this variety, but just before bottling.
Vineyards
The vineyards of this winery work in a particular way, as the elaboration of the wine depends on and adapts to the characteristics of the vintage. So you will be able to taste different varieties with or without fruity nuances, wood or other elements that determine the variety. Most of the fruit comes from old soils that provide a distinctive element compared to others in this area.
