Description
In the heart of the Val do Salnés, where the Atlantic permeates the landscape with its salty breeze, the Zárate family has been cultivating its vineyards for more than three centuries. The estate, located in the epicentre of the Rías Baixas D.O., has witnessed a winemaking philosophy centred on absolute respect for the land. In 1994, they decided to abandon herbicides and opt for a sustainable viticulture, with plant cover and zero tillage. The idea of making a single varietal Caiño Tinto came as a gesture of vindication: to recover a historical variety, difficult and not very productive, but with an unequalled Atlantic expressiveness. The result is a Galician red wine that speaks of the place and of the obstinacy of those who refuse to follow easy paths.
Winemaking
Zárate Caiño Tinto is harvested by hand, with a meticulous selection in the vineyard. Once in the winery, the grapes are crushed whole, without destemming, and ferment spontaneously in open oak vats. For four weeks, the grapes are pumped over daily, in order to achieve a delicate but deep extraction. After alcoholic fermentation, the wine undergoes malolactic fermentation and is aged for eight months in third-use French oak barrels. The wine is neither filtered nor clarified before bottling, maintaining all its essence and texture.
Taste
In the glass, Zárate Caiño Tinto has a bright, luminous and lively cherry colour. The nose is a burst of freshness: crisp red fruits such as raspberry and cherry, along with floral notes and a subtle herbaceous background. There are also hints of minerals, almost saline, which evoke the granitic soil of the Salnés. On the palate, the wine is taut, direct, with a vibrant acidity that cleanses the palate and propels it towards a long, spicy finish. The texture is light but firm, with fine tannins that add structure without robbing it of fluidity. There is a kind of wild elegance about it, an authenticity that seeks not to please everyone, but to thrill those who appreciate uniqueness. It is an Atlantic red in its purest form: fresh, dry, incisive and absolutely true to its origin.
