In 2023, the Tissot's got their largest crop ever. The wines are fresher and with more fluidity than in 2022. A preview of the 2023 Trousseau Singulier had a lifted nose, expressive and floral with hints of bubble gum. It felt a little different, as it had had three weeks of carbonic maceration. They have only produced a handful of carbonic maceration reds and are experimenting a little more. It seems to polish the varieties' tannins. 2023 is a cool year for reds, bright and vibrant with tension, like 2016.

Description
Tissot Arbois Trousseau Singulier is an exceptional Jura wine produced by Bénédicte and Stéphane Tissot. This wine is made exclusively from the Trousseau variety, originating from five different sites: les Rosières, Béranger, En Muzard, les Corvées sous Curon and les Bruyères. These vineyards cover a total of 2.78 hectares, with vines ranging in age from 10 to 80 years old, thus combining youth and maturity.
Winemaking
The winemaking process begins with a manual harvest and a meticulous selection of the grapes, which are then destemmed before vinification. The grapes are fermented in truncated cone-shaped wooden vats and aged in demi-muids (600-litre barrels) for a year, with 10% new barrels, which adds complexity and structure to the wine. Production follows the principles of biodynamic agriculture, which guarantees total respect for the environment and the maximum expression of the terroir.
Taste
Tissot Arbois Trousseau Singulier offers a unique sensory experience. On the palate, it has a silky texture and fine, slightly dusty tannins that evoke an earthy sensation characteristic of the Jura terroir. The aromas unfold in notes of ripe red fruits, spices and a touch of minerality that adds freshness and depth to the whole. The structure of the wine is remarkable, with a balanced acidity that gives it a long, lingering finish, ideal for pairing with robust dishes such as onion black pudding or a Mont d'Or cheese.
