Description
La Senda La Barbacana is a wine that faithfully reflects the tradition and character of Bierzo. This wine comes from a singular vineyard over 100 years old, planted in soils rich in slate, quartz and iron, at an altitude of 650 metres. The vineyard's location, on the western edge of Bierzo, close to Galicia, offers an optimal microclimate that contributes to the quality of the grapes. This vineyard is situated in front of a 13th century castle and over an old Roman mine, which adds a historical and mineral dimension to the personality of the wine.
Winemaking
Made by Diego Losada, a winemaker committed to organic and sustainable viticulture, La Senda La Barbacana is composed mainly of 90% Garnacha Tintorera (Alicante Bouschet), complemented by 10% Mencía. The grapes are harvested by hand and undergo a respectful vinification process that seeks to preserve the purity of the fruit. Fermentation is carried out in open chestnut vats, with a short maceration of 3 to 4 days, without pumping over, to avoid excessive extraction of tannins.
The wine is then transferred to 650-litre chestnut barrels, where it continues its fermentation and ageing for 11 months. During this process, no additives, SO2, fining or filtration are used before bottling, resulting in a natural wine, with no chemical intervention affecting its essence. This approach to winemaking brings a purity and complexity that is reflected in every bottle.
Taste
On the palate, La Senda La Barbacana offers a deep and nuanced experience. Ripe black fruit flavours intertwine with mineral notes and pronounced acidity for freshness and balance. The tannic structure is firm but well integrated, giving it remarkable grip without being aggressive. The 11 months in chestnut barrels add a subtle layer of spice and an earthy touch, typical of wines from this region. The finish is long, with a persistence that reflects the complexity and character of the terroir. Perfect for pairing with roast lamb or umami-rich dishes such as game or game meats.
