The extreme and ultra-old NV Amontillado Superiorísimo Miraflores Alta comes from a family winery in Miraflores Alta, like the other Miraflores Alta bottlings, but they had not touched the wine since 2008, the last harvest they did. It has tons of incense, varnish, seawater, iodine and lots of complexity. It has a profile that I often find in very old wines, rusty nail, extra-vecchio aceto balsamico, salty, telluric, mineral. It's pungent and intense with marked salinity and strong bitter flavors; it burns your throat. Very extreme, not for the faint of heart. Only 150 half bottles were produced.

Description
Many of the examples from this bodega have not been rescued from the closure that marked the end of the almacenista versions in the 1980s. However, Willy Pérez and Ramiro Ibáñez have devoted themselves to searching for the soleras that tell the history of Jerez, in order to rescue the oldest versions of these wines.
This is the case of Amontillado Superiorísimo Miraflores Alta, a wine that is part of this history, as it comes from a plot in the Miraflores Alta sub-region, where the vineyard does not exist today.
However, in the winery where the last harvest was made, they managed to find a barrel where this wine was aged, but it only had a little more than 40 litres.
It was then that Willy and Ramiro, captivated by its quality, wanted to use it up in 100 bottles.
Elaboration
The production process of the Amontillado Superiorísimo Miraflores Alta wine is not supported by any documents, as only one solera with a little more than 40 litres was found.
However, Willy Pérez and Ramiro Ibáñez can confirm that this wine has been aged for more than 60 years, and that sherry casks were used for its storage.
Taste
Amontillado Superiorísimo Miraflores Alta has a very peculiar dark amber colour, with a marine aroma on the nose. On the palate you can taste an extreme salinity, typical of Sanlúcar de Barrameda.
