Description
Julien Brocard, heir to one of the most emblematic families in Chablis, decided in the 1990s to follow a path less travelled: to leave behind conventional practices to embrace biodynamic agriculture. His aim went beyond environmental respect: he sought to reconnect the wine with the natural rhythms, the energy of the soil and the purity of the grapes. Boissonneuse was his first certified vineyard, a brave gamble that transformed a traditional plot of land into a sensory garden. Located in the commune of Préhy, this parcel of Chardonnay sits on Kimmeridgian soils - a mixture of clay, marl and marine fossils - a true pillar of minerality that distinguishes true Chablis. The vineyard is cultivated without pesticides or herbicides, with regenerative practices, natural preparations and absolute respect for the environment. Each decision in the vineyard follows a lunar calendar, following biodynamic principles that seek to express, without artifice, the purest identity of the terroir.
Winemaking
The vinification of Julien Brocard Chablis Boissonneuse is as precise as it is respectful. The grapes are harvested by hand at just the right moment to preserve the freshness and tension of the fruit. Fermentation is carried out with indigenous yeasts in stainless steel tanks, without additives or corrections. There is no oak ageing: Julien Brocard prefers to let the soil do the talking. The wine remains for several months on its fine lees, without batonage, gaining structure and depth in a natural way. Bottling is carried out with a minimum dose of sulphur dioxide, just enough to protect the wine without detracting from its expression. The result is an honest, lively and vibrant Chablis that faithfully reflects the character of the vineyard and the winemaker's vision.

Julien Brocard Chablis Boissonneuse is a wine of tension and harmony. On the nose, it displays notes of soft honey, candied orange and a vegetal nuance of green pepper, all on a chalky background reminiscent of wet stone. On the palate, it shows a lively, precise acidity, with hints of fresh lemon and citrus zest.
