Description
The story of this wine was born from the meeting of tradition and precision in the heart of Chablis, where the Domaine Billaud-Simon family decided to create a cuvée that would synthesise the essence of their best plots. Thus was born Billaud Simon Chablis Tête d'Or: a meticulous selection of vineyards located next to the Premier and Grand Cru, on Kimmeridgian soils rich in marine fossils and with a privileged orientation. This decision - to focus production on elite vineyards within the "village" appellation - was a firm commitment to purity and detail. The grape variety is 100% Chardonnay, grown in a continental climate that slows down ripening, preserving freshness and tension. The cuvée embodies the soul of the winery: rigour, elegance and uncompromising minerality.
Winemaking
After a selective harvest, the grapes destined for Billaud Simon Chablis Tête d'Or are gently pressed to avoid the extraction of undesirable compounds. Fermentation takes place in temperature-controlled stainless steel tanks, a technique adopted by the winery since the 1980s to preserve the cleanest possible varietal expression. Ageing is carried out for a short period in oak barrels, seeking complexity without interfering with the mineral purity of the wine. This discreet use of oak allows the tension and linearity characteristic of great Chablis to be maintained.
Taste
On the nose, Billaud Simon Chablis Tête d'Or displays notes of candied lemon, green apple and white flowers, wrapped in a delicate layer of limestone, with a background of sea salt. The palate is straight, sharp, with a vibrant acidity reminiscent of a blade on wet granite. The texture is fine, elegant, with restrained energy that is released on a long, saline finish. A hint of ripe pear and chalk appears in the aftertaste, but without ever stealing the limelight from the minerality. Billaud Simon Chablis Tête d'Or does not seek to seduce with fruity exuberance, but with precision and nerve. Ideal with seafood, oysters or baked white fish, where its purity enhances every nuance of the dish.
