Description
Étienne Calsac belongs to the new generation of Champenois vignerons who work with surgical precision and artisanal conviction. In 2010, he took over the family plots located in the Côte de Sézanne, an area often overlooked by the great northern crus, but which hides its own fresh, mineral identity. There, on a plot adjacent to "Les Revenants", Calsac decided to vinify this 100%Chardonnay as if it were a white mirror of that wine.
Winemaking
The result is Étienne Calsac Comète Nº3, a Blanc de Blancs with no additions, no make-up: spontaneous fermentation, no added sulphur, no filtering, no expedition liqueur (dosage 0 g/L). A wine that can only be explained by courage and an obsession for purity.
The clay-limestone soils with chalk subsoil act as a thermal sponge that brings tension to the wine, especially relevant in a continental climate of cool nights and bright days. Étienne Calsac Comète Nº3 spends 20 months on the lees, capped with natural cork, allowing a delicate micro-oxygenation that accentuates complexity without losing edge.
Taste
On the nose, Étienne Calsac Comète Nº3 unfolds with elegant restraint: dried lemon, lime zest, green apple. Nothing exuberant, all filigree. The mineral background is revealed with notes of limestone, wet clay, a salinity that seems to float in the air. Subtle hints of brioche appear, barely hinted at, a product of the lees work rather than of the oxidative character.
On the palate, Étienne Calsac Comète Nº3 is pure nerve: the acidity crosses the palate like a fine, electric lightning bolt, carrying with it flavours of fresh citrus fruits, apple peel, a touch of white pear and a saline aftertaste reminiscent of sea breeze. The bubbles are fine, perfectly integrated, almost tactile. It is a direct, tense, uncompromising wine that seeks transparency rather than roundness. Long, dry, deeply mineral finish.
Étienne Calsac Comète Nº3 is not a Champagne to impress with foam or sugar; it is a wine of texture, of silence, of origin. A wine that, like the shooting stars that give it its name, shines for its fleeting purity and leaves its mark on those who know how to look.
