Calsac’s 2021 vintage-based NV Les Revenants, hailing from a single 0.5-hectare, east-facing plot in Montgenost in the Côte de Sézanne, is the most incisive wine in the range this year and, analytically speaking, the cuvée with the lowest pH. After completing his oenology studies, in 2010 Étienne replanted several rows to other varieties typically associated with small-scale production—Pinot Blanc (60%), Petit Meslier (35%) and Arbane (5%)—and produced the first vintage of this blend in 2016. In the cellar, the wine is matured for seven months in used 600-liter barrels and bottled under cork. Opening in the glass to reveal notes of exotic white flowers, saffron, orange zest and mint, it’s medium-bodied, quite chiseled and tightly wound, uniting the aromatic expressiveness of the heirloom grapes with the definition and structural tension. With a tangy spine of acidity and chalky extract, it concludes with a long, penetrating finish. It was disgorged in July 2024 with three grams per liter dosage.

Description
Étienne Calsac always had a penchant for the forgotten. While his contemporaries were perfecting Chardonnay and Pinot Noir, he decided to look to the almost lost roots of Champagne. In 2010, still finishing his studies, he replanted a few rows of Pinot Blanc, Petit Meslier and Arbanne - old and undervalued varieties - on a family plot in the Côte de Sézanne. It was a bold commitment to a vision: to bring back Champagne "à l'ancienne", as it was made in the old days, with grapes that speak of the past and the soil that gave birth to them.
This soil - a mixture of sands and clays on a chalky subsoil - together with the slightly milder climate of the area, gives the wine a unique mineral tension, with balanced ripeness. In 2016, for the first time, production was enough to fill a single 600-litre barrel. Thus Étienne Calsac Les Revenants, "those who return", was born as an act of memory and conviction.
Winemaking
Fermented naturally in this single 600-litre oak barrel, with no added sugar, Étienne Calsac Les Revenants is aged for six months on the lees before bottling. It then spends 30 months under natural cork before disgorging, without any dosage (Brut Nature). A deliberately minimalist method, which favours the authenticity of the terroir over intervention.
Taste
From the very first moment, Étienne Calsac Les Revenants impresses with its tension and purity. The bubbles are very fine, perfectly integrated, with an aromatic profile that combines ripe citrus fruits - candied lemon, citron - with green apple, white pear and dried flowers. The ageing adds subtle nuances of toasted bread, beeswax and raw almonds, without detracting from its freshness. On the palate, the wine is vertical, saline, with a long, mineral finish reminiscent of the chalky soil from which it originates. There is a restrained energy that unfolds slowly, making this Champagne not just a wine to celebrate, but to contemplate. A radical, precise and deeply evocative rarity.
