Today, Tomás' children, Ricardo and Mónica Esteban, are at the helm of the winery, bringing new ideas and energy, without losing sight of the respect for tradition and love of terroir that has defined Valderiz since its beginnings.
Ricardo Esteban, the project's winemaker, has worked intensively in some of the most respected vaults in the region before devoting himself fully to Valderiz. This experience has enriched his vision of winemaking, combining the knowledge he has acquired with the sensitivity that only comes from cultivating the land day by day.
Vineyards
The Valderiz vineyards are spread over 60 hectares of carefully selected land located in different plots surrounding the winery in Roa. Each plot has its own personality, influenced by altitude, microclimate and soil composition. These differences are reflected in the diversity of wines they produce, each with unique nuances that tell the story of the land where they were born.
The terroir of Valderiz is complex, characterised by a mixture of sandy, clay and calcareous soils, which give the wines an unmistakable identity. The altitude of the vineyards, which is between 750 and 900 metres above sea level, favours a wide temperature range between day and night, which allows the grapes to ripen slowly and evenly, ensuring wines with good acidity and structure.
Valderiz has made a firm commitment to sustainable agriculture, respectful of the environment and the biodiversity of its surroundings. They have implemented organic farming techniques that seek to maintain the vitality of the soil and minimise the use of chemical products, thus achieving healthy and balanced vineyards. Winemaking at Valderiz follows traditional principles combined with innovations that allow us to extract the best from each vintage. The grapes are harvested by hand at the right moment of ripeness, seeking the perfect balance between acidity, sugars and tannins. Grape selection is meticulous, ensuring that only the best clusters reach the winery to begin the winemaking process.
In the winery, respectful winemaking techniques are employed, including spontaneous fermentations with indigenous yeasts, i.e. those found naturally in the vineyard and the winery. These yeasts provide an aromatic complexity that makes each wine a unique expression of the vintage and the place it comes from. In addition, fermentation is carried out in stainless steel tanks and oak vats, which allows for precise temperature control and the extraction of aromas and flavours.
The ageing of the wines takes place in French oak barrels, carefully selected to respect and enhance the qualities of the wine without masking its essence. The use of medium toasted French oak allows the wines to evolve slowly, developing complex notes ranging from red and black fruits to more spicy and balsamic nuances. This careful maturation gives structure and longevity to the wines, without losing the freshness and typicality of the grape.
