It's very interesting to taste a soon-to-be-bottled Manzanilla alongside the same wine that's been in bottle for one year, as I sampled the NV Manzanilla Deliciosa en Rama that was going to be bottled in the spring of 2019 next to the wine that had been bottled the year before. This felt tremendously young, with even a touch of lemon skin, which I sometimes find in very young biological wines. I tasted this just before bottling, and it was just like drinking wine from the bota. The wine will settle in bottle, and the explosive character I saw will not make it to the shelves. This wine is always from the same botas, so the differences are more a matter of how long the wine has been in bottle. In any case, I loved what I tasted. 8,600 bottles.

Description

Since 1430, Valdespino has patiently and masterfully woven a history that blurs the boundaries between tradition and legend. Founded by one of the oldest families in the Jerez region, the bodega has been making wines that express, with precision and depth, the soul of their origins for almost six centuries. But among all its creations, there is a jewel that beats with its own voice: Valdespino Manzanilla Deliciosa en Rama, whose Saca de Primavera represents the purest essence of Sanlúcar.

Valdespino Manzanilla Deliciosa en Rama is born exclusively in the Sanlúcar de Miraflores estate, a mythical spot that combines albariza soils with the direct influence of the Atlantic Ocean. In this privileged terroir, the Palomino Fino finds a unique expression: delicate, saline, sharp. The ageing takes place in the historic Misericordia winery, founded in the 16th century and located in the upper quarter of Sanlúcar, open to the freshness of the sea winds. It was here, in an act of resistance to standardisation, that Valdespino decided to bottle this Manzanilla en Rama straight from the butt, unfiltered, unclarified, untamed: on the vine, as it was done in the old days, when wine did not need masks.

Winemaking

Valdespino Manzanilla Deliciosa en Rama is bottled in April, when the flor reaches its peak, protecting the wine from oxidation and giving it an almost ethereal freshness. After an average biological ageing of 6 years under the criaderas and soleras system, specific butts were selected showing exceptional tension and finesse. The wine contains sulphites, but does not undergo any filtering, preserving intact its yeasts, its minimal turbidity and its lively character.

Taste

In the glass, Valdespino Manzanilla Deliciosa en Rama has a clean, bright golden colour, and as the nose approaches, that unmistakable coastal salinity emerges, tinged with a faint perfume of flor yeast and a freshness reminiscent of the Atlantic breeze. On the palate, the entry is sharp, tense, marked by a deep minerality. Hints of toasted almonds, ripe apple and a very elegant bitter background that lengthens the wine in a saline, dry and very long aftertaste.

Valdespino Manzanilla Deliciosa en Rama is a wine for purists, for those who seek authenticity without concessions. Ideal with seafood, smoked fish or simply on its own, contemplating how the Atlantic has left its subtle but indelible mark on each sip.
