The NV Tio Diego Amontillado Palomino from the Macharnudo vineyard, is fermented in botas, aged biologically for 10 years under flor in a solera separated from Inocente, and with a further five years of oxidative aging. It has a beautiful, perfumed nose of dry flowers, very elegant and clean, subtle, with some saline notes, both in the nose and the palate, where it is balanced, medium-bodied and elegant. A very fine Amontillado, showing superb value for a 15-year-old wine. Drink 2013-2019.

Description
In the heart of the Marco de Jerez, where the albariza limestone reflects the light with blinding intensity and the east wind sculpts the character of the wines, Valdespino Amontillado Tio Diego remains a beacon of tradition. Founded in 1430, this historic house has been making wines for almost six centuries with an unwavering fidelity to the most classic methods. Among its most revered soleras, Valdespino Tio Diego stands as a pure testament to Amontillado made with conscience: no concessions, no artifice, just patience, terroir and time.
The origin of the wine is in Pago Macharnudo, one of the highest and most privileged areas of the area, famous for its pure albariza and its altitude, which brings freshness and tension. The Palomino Fino grapes, an almost ascetic variety in expression, find their maximum nobility here. Valdespino Amontillado Tio Diego was born as an almost obstinate decision: to maintain a separate solera from that of Fino Inocente, fermented in American oak casks, with indigenous yeasts and without modern intervention. It is a declaration of principles in a world increasingly dominated by speed.
Winemaking
After fermentation in butts, Valdespino Tío Diego begins its life under the veil of flor, in biological ageing for more than ten years, more than usual even for an old fino. Then, almost naturally, the veil weakens and the second phase begins: oxidative ageing, which lasts for at least five more years. This entire process is carried out using the criaderas and solera system, with meticulous rackings that gently oxygenate the wine and concentrate its structure. The result is an Amontillado that is aged for more than 15 years, without losing any of its freshness.
Taste
In the glass, Valdespino Amontillado Tio Diego dazzles with a dark amber colour, reflecting its slow evolution. The nose is precise and elegant: notes of toasted hazelnut, dried flowers and a saline background evoking the Atlantic breeze. There is no stridency, just layers of complexity that invite you to pause. On the palate, the wine is dry, ample, with tension and impeccable balance. The acidity is sharp but integrated, and the saline, nutty reminiscence lingers with serene intensity. An Amontillado for purists, ideal at 15ºC as an aperitif or as a companion to consommés, white meats or small game dishes. A wine that speaks of time, of the soil and of a way of making wine that has almost disappeared.
