Description
An ancient breeze brings the echo of a courageous decision: Eduard Pié, moved by the mineral pulse of the Penedès and the desire to transcend the everyday, opted for a singular, indigenous and brittle grape: the Cartoixà. Thus Sicus Cartoixà was born, the fruit of a single plot, "El Mas", where 68-year-old vines cling to well-drained, limestone loam soils with a marine orientation. Just 7 km from the Mediterranean and 200 metres above sea level, the vineyard breathes salt and stone, which translates into a wine that does not seek to please, but to reveal. There are no tricks here. Eduard decided not to press the grapes: he let the must emerge under its own weight, without intervention, without urgency. A way of surrendering to the character of the place, allowing the earth to speak clearly, without make-up.
Winemaking
The grapes are harvested by hand, cluster by cluster, with the meticulousness of someone caressing a memory. The grapes are put whole in tanks, where Sicus Cartoixà remains for three months in a kind of slow fermentative infusion, without pressing, in contact with the skins. Subsequently, the wine is aged for seven months in stainless steel tanks. No barrels, no unnecessary additions. The steel acts as a neutral mirror, reflecting every nuance of the terroir, the climate and the grapes. The process seeks to preserve the freshness and natural tension of the Cartoixà, a rare and tremendously expressive variety when left to its own devices.
Taste
Sicus Cartoixà presents itself with a sober but electric nose: citrus zest, pink grapefruit, a saline hint that evokes the closeness of the sea. Mineral notes intertwine with subtle hints of white fruit, dried grass, orange peel and a hint of vegetal notes that add structure and verticality. The palate is low in alcohol, but surprising with a vibrant, almost athletic energy. The acidity is crisp, taut and lively, as if each sip connects directly with the stone. There is no apparent sweetness, just texture, salinity and a long finish with earthy notes, faint hints of green papaya or discreet pineapple. It is an austere wine, but deeply expressive. Ideal for pairing with raw fish, seafood or vegetable dishes with umami. Sicus Cartoixà does not shout: it whispers mineral truths, with the courage and calm of someone who does not need to embellish to be unforgettable.
