Description
From the gentle Atlantic breezes of Val do Salnés, Pedro Méndez was born with a conviction: to pay homage to his land with the transparency of a clean gaze. This philosophy gave birth to As Abeleiras, a wine made exclusively from Albariño grapes, which took shape when Pedro, together with his father, delimited a special plot planted in 1993, located at a modest 100 metres above sea level on a sculptural soil of sandy granite. It was an act of courage: deciding to bottle a small portion of the vineyard separately, preserving its purity, even though the other wines could be pronounced more quickly. This plot, almost a secret, speaks of the Galician landscape without intermediaries: the mist that settles at dawn, the Atlantic humidity that refreshes the clusters, and those old vines that converse with the wind. The vineyard, located in Rías Baixas, lives that unique tension between the mineral and the marine, between austerity and restrained intensity.
Winemaking
The production of Pedro Méndez As Abeleiras begins in the vineyard, where organic farming is practised and the grapes are harvested by hand in 15 kg boxes. In the winery, after a gentle destemming, maceration with the skins is carried out for 12 hours, followed by direct pressing without prior racking. Fermentation is spontaneous, with indigenous yeasts, and is carried out in stainless steel tanks, without malolactic fermentation.
Ageing lasts 10 months on its lees, 25% of which is in used French oak barrels and the rest in stainless steel. There is no fining or tartaric stabilisation, only light filtering and a precise dose of sulphur dioxide, designed to preserve freshness without detracting from its identity. The result is a wine that exudes authenticity, tension and purity.
Taste
On the nose, Pedro Méndez As Abeleiras opens up a landscape of squeezed Sicilian lemon, but not at all sweet; it is the rind rather than the pulp, dotted with a marine scent reminiscent of broken shells and salty air. There are barely hinted floral flanks - a breeze of green quince or a subtle note of orange blossom, but no perfume. Everything remains restrained, sharp, dry.
At first sip, the wine glides with surgical precision: taut citrus(lime, white grapefruit) that prick the tongue with vibrant acidity. That acidity, far from clashing, cleanses the palate and launches into an almost sandy mineral centre. Notes of fine salt and coastal herbs(lemon balm, fresh sage in the shade) emerge in the background, conferring a restrained freshness. The palate is tense, pure skeleton, with a noble bitterness that lingers alongside a very fine aftertaste of white fruit and wet stone.
It is a wine to contemplate. It does not feign richness, but sharpens the senses. Each sip invites you to silence: to savour the austerity with your head held high, like adoring a minimalist sculpture which, without the noise of excess, says it all.
