There is a new bottling of the youngish (12 years?) Manzanilla Pasada that was offered with number 70 in magnum, the NV La Bota de Manzanilla Pasada 103 Mágnum, which is again released exclusively in magnum bottles. I found a lot of biological notes in here, very spicy, with notes of curry that transported me to the Jura, with a light and fresh palate, really delicious and easy to drink, with complexity and depth. It's a vibrant wine, alive and kicking. There are 1,000 magnums. It was bottled in March 2021.

Description
In Sanlúcar de Barrameda, where the salt of the Atlantic seeps into the breath of the streets and time rests on the butts like an invisible veil, La Bota de Manzanilla Pasada 103 "Mágnum" embodies an almost extinct way of understanding wine. In the historic cellars of Calle Misericordia, discreetly refurbished to preserve its soul, is the Sala de Banderas: a silent sanctuary where the most personal wines of this lineage mature. There, in two barrels of 90 arrobas, lie the hidden jewels of the pastmanzanilla, chosen from the most expressive butts of the first criadera (1/41), also the origin of legendary editions such as 10, 20 or 30. A gesture of respect for the past, and at the same time, a radical act of preservation.
This wine comes entirely from Palomino Fino grown in pure albariza vines, under the mild and humid climate of Sanlúcar, where the constant sea breeze nourishes the biological ageing with a unique character. Here, flor is not just a veil, but a philosophy. However, after about 13 years of average ageing, the veil slowly fades and the wine begins to skirt the contours of oxidative, while still sustaining its saline tension.
Winemaking
The winemaking process of La Bota de Manzanilla Pasada 103 respects the classic canons of the Jerez region. The Palomino is vinified in the traditional manner and is topped at around 15% vol. before entering the dynamic system of criaderas and soleras. For this edition, butts with great definition and structure were selected and then racked into two large capacity casks, where the wine rested in particular conditions: less surface area in contact with oxygen and a slower evolution. There is no artifice or modernity. Just the passage of time, the stillness of the building and the wisdom of letting things be.
Taste
La Bota de Manzanilla Pasada 103 shows unmistakable depth and complexity on the nose, with notes of dried almond, citrus peel, a background of sea breeze and wet chalk. There are also traces of camomile, old wood and a whisper of white smoke. On the palate, the entry is dry, almost sharp, but soon unfolds a dense, enveloping texture. Sharp salinity, hints of dried fruits, an austere but vibrant line. The finish is long, with a slight noble bitterness reminiscent of walnut skin and mineral. An uncompromisingly cultured manzanilla, for those in search of emotion, purity and truth in liquid form.
