Description

François Cotat Les Monts Damnés is one of the most representative wines of the Sancerre region, in the prestigious Loire Valley, France. Made from 100% Sauvignon Blanc grapes, this wine stands out not only for the quality of the variety but also for the careful vinification process and the richness of the terroir in which it is grown. François Cotat, following the family tradition, has maintained traditional winemaking methods, handed down from generation to generation since the 1940s, which has allowed his wine to be considered a benchmark in the appellation.
The vineyard Les Monts Damnés is located on the steep hills of Chavignol, with almost vertical slopes and south orientation, which favours a maximum sun exposure. This orientation, together with the terres blanches soil composed of Kimmeridgian limestone, gives the wine its unmistakable minerality. These soils are renowned for being one of the most unique and complex terroirs in the region, sharing geological characteristics with the famous vineyards of Chablis. The vines, with an average age of 30 years, are at their optimum point of production, which adds depth and concentration to the wine, resulting in a drink that combines elegance and character.

Winemaking

In terms of winemaking, François Cotat follows traditional methods, maintaining an artisanal approach. Harvesting is done by hand, which ensures a careful selection of the ripest grapes. These are pressed in an old-fashioned vertical wooden press, a rare method nowadays that preserves the natural characteristics of the grapes. Fermentation takes place with indigenous yeasts in old oak barrels (demi-muids) over 50 years old, which contributes to the complexity and longevity of the wine. Ageing takes place in used oak barrels to soften the texture without adding excessive wood, and the wine is bottled by hand without being filtered or clarified, respecting the lunar cycles.
