Description
High up on the hill of Béru, embraced by the centuries-old walls of the old château, lies a hidden garden: Château de Béru Chablis Orangerie, a plot of barely half a hectare that defies the conventions of classic Chablis. This walled clos - built with stones salvaged from the old defensive walls of the château - holds not only history, but also a vision: that of Athénaïs de Béru, who, after inheriting the family vineyard, made the bold decision to give it back its soul by converting it entirely to biodynamic viticulture. It was a radical gamble in a region dominated by more conventional practices. But Athénaïs, true to his bond with the land and Béru's past, chose to listen to the soil rather than follow trends.
L'Orangerie 's plot rests on an island of rich, dense clay, set on the Kimméridgien bedrock, that fossilised, chalky terroir so emblematic of Chablis. But here, the southern orientation and natural protection from cold winds create a unique microclimate, which gives the wine an unusual ripeness and a rare tension. The grapes - exclusively Chardonnay -benefit from this contrast: ample sunshine during the day and cool nights, which set the acidity with surgical precision.
Winemaking
Château de Béru Chablis Orangerie is harvested by hand, with rigorous selection in the vineyard and in the cellar. The grapes are fermented with indigenous yeasts, without intervention, in stainless steel tanks and old neutral oak foudres, respecting the expression of the terroir as much as possible. Ageing takes between 12 and 18 months on fine lees, without bâtonnage, allowing the wine to patiently build its texture. Bottling is carried out without fining or filtering, and with minimal or no sulphur, reaffirming the philosophy of minimal intervention.
Taste
On the nose, Château de Béru Chablis Orangerie displays a refined palette of taut citrus, lime zest, and a faint hint of kumquat, wrapped in a cutting minerality reminiscent of wet stone. On the palate, however, its unctuous volume is surprising, like a saline caress enveloping the palate, supported by a backbone of sparkling freshness. The wine walks steadily between the ethereal and the earthy: on the one hand, its almost ascetic purity; on the other, that sense of depth, of layers that open up with time and air. Long finish, with noble bitterness reminiscent of grapefruit peel and green almond.
A Chablis of contemplation, which honours the past but looks fearlessly to the future.
