Description
Ànima Negra ÀN is a red wine produced in the region of Mallorca. It is composed mainly of grapes of the Callet variety (95%), complemented with small proportions of Mantonegro and Fogoneu. The vineyards where these grapes come from are planted in poor soils rich in iron oxide, on calcareous rocks, known as Call Vermell. These plots, influenced by fruit trees and subject to daytime winds called embates, provide an ideal environment for the growth of healthy, vigorous vines.
Winemaking
The grapes are harvested by hand in 10 kg crates. The grapes are cooled in chambers at 8-10°C overnight before being sorted by an optical berry by berry system. Fermentation takes place in 4,000 litre French oak vats, using indigenous yeasts selected over the years from the best plots. Malolactic fermentation and ageing take place in new, very fine-grained French oak barrels for 14-18 months, with a racking halfway through the process and a final rest in cement tanks for two months before bottling.
Taste
Ànima Negra ÀN has a cherry red colour with a violet rim. On the nose, it is clean and bright, with a power that reveals aromas of black and red fruits, balsamic, light spices, tobacco, liquorice and aromatic herbs. Soft sensations of wild flowers can also be detected. On the palate, this wine is sweet, ripe and enveloping, with a persistence that leaves a pleasant fruity aftertaste without sharp edges. We recommend serving it at 16ºC to fully enjoy its complexity and balance.
This wine is an authentic representation of the flavours and aromas of the island of Mallorca, ideal to accompany cold meats, tapas and all kinds of meats. Its character and personality make it an excellent choice for lovers of wines with a marked identity and elegance.
