Description

Tissot Arbois Savagnin Sous Voile is an exceptional wine produced by Bénédicte and Stéphane Tissot in the Jura region of France. This wine is made from Savagnin grapes, grown on plots with clay soils and calcareous subsoils, following organic and biodynamic farming methods.

Winemaking

The vinification of Tissot Arbois Savagnin Sous Voile begins with a traditional fermentation, followed by 36 months of ageing under a yeast veil , similar to the vin jaune process, but for a shorter period. This method allows controlled oxidation of the wine, giving it unique and complex characteristics.

Taste

Tissot Arbois Savagnin Sous Voile offers an impressive sensory experience. On the nose, it displays an aromatic power that evokes a wide range of spices such as cardamom, clove and curry, along with notes of nuts such as walnut and hazelnut. On the palate, this wine combines density and vivacity, presenting a smooth texture and refreshing acidity with hints of orange rind and liquorice. The finish is remarkably long, making each sip a lasting and memorable experience. It is best enjoyed at a serving temperature of 11-12°C, after aeration for one to two hours. Its versatility makes it perfect to accompany dishes such as well-spiced sauerkraut, smoked fish with wasabi or spiced braised pork. In addition, because of its aromatic complexity, it can be enjoyed on its own as a digestif, similar to a Chartreuse or a high quality Cognac.
