Description
At the Familia Nin-Ortiz winery, the wine is born of absolute respect for the land and a tireless search for purity. Selmot Ancestral is a declaration of intent: to capture the essence of the Montònega variety - the local name for Parellada grown at Altura - with no frills, no artifice, just organic grapes, ferment and time. Ester Nin and Carles Ortiz, biodynamic winegrowers and custodians of the Alt Camp landscape, wanted to make a natural sparkling wine that spoke softly but with total sincerity. Organically farmed vineyards, poor soil and Mediterranean climate with Altura influences give shape to this vibrant wine. The decision to bottle without the addition of sulphites or external yeasts was risky, but necessary: to let the wine make itself.
Winemaking
After a manual harvest, the grapes are gently pressed and fermented with indigenous yeasts. Selmot Ancestral is bottled before finishing, thus initiating the second fermentation in the bottle under the ancestral method. The wine remains on its lees for about 10 months, without disgorging, preserving its natural turbidity. No added sulphites, no fining, no filtering. A raw wine, clean in its truth.
Taste
Selmot Ancestral is subtle and austere on the nose, with aromas of green apple, citrus peel, dried hay and a delicate hint of wild bakery. The bubbles are fine but lively, providing texture without being prominent. On the palate, Selmot Ancestral is direct, dry, with an incisive acidity that cleanses the palate and awakens the senses. There is a constant mineral tension, a salinity reminiscent of mountain wind, and a slightly bitter, raw almond-like finish. A wine that does not seek to please, but to provoke. Selmot Ancestral is a small liquid revolution: radical in its honesty, profound in its simplicity.
