The white 2023 Principia Mathematica comes from two vineyards, both old, one in the Garraf and a smaller one in central Penedès, all picked at the same time, pressed and fermented in untoasted 700-liter oak barrels that give structure but no toast. They pick early, aiming for 12% alcohol, and ferment slowly with indigenous yeasts, and the suspended lees give it some structure. It's bottled unfined and unfiltered. This 2023 has a more reductive profile, with a serious and chalky mouthfeel, tasty, almost salty. It doesn't have any heat or excess ripeness. I love it. 7,000 bottles produced. It was bottled in June 2024.

Description
Principia Mathematica is an exceptional wine that represents the essence of the Penedès DO in Catalonia, Spain. This wine is a creation of Irene and Laurent, who have challenged the traditional perception of wines from this region. They have converted their vineyards to follow basic organic practices, abandoning the high yields typical of Penedès and all chemical treatment and fertilisers.
The grape variety used for Principia Mathematica is 100% Xarel.lo, an indigenous grape that stands out in the region. The vineyards, approximately 45 years old, are located on clay and limestone soils, with a yield of approximately 4000 kg per hectare. These vineyards are managed with a gobelet style of pruning and the reasoned fighting, a sustainable viticulture approach, is practised.
Winemaking
Principia Mathematica is vinified in 228 and 700 litre French oak barrels, fermented with wild yeasts. After fermentation, two thirds of the wine is aged in 700 litre French oak barrels and one third in stainless steel. This ageing process lasts 8 months, using 90% oak and 10% new oak.
Taste
Principia Mathematica offers a complex and balanced flavour profile. It is characterised by a crisp white fruit and apricot aroma, with a light nutty and buttery Meursault style. On opening, the aromas become richer and more balanced. On the palate, it is dry, with a soft but fresh acidity. It has a lovely depth of white fruit intertwined with minerals, hints of apricot and nuts. This wine is exceptionally versatile in food pairings, being ideal with seafood, but also pairs wonderfully with grilled pork sausages or fire-roasted lamb chops, finished with a touch of fresh rosemary.
