The 2012 Extra Brut Blanc de Noirs was disgorged in September 2018 with 4.5 grams per liter dosage. Offering up notes of fresh peach, honeycomb, mint and warm bread, it's medium to full-bodied, broad and textural, with lively acids, excellent concentration and a chalky finish. It's showing very well.

Description
Philipponnat Blanc de Noirs Extra Brut is a 100% Pinot Noir champagne, made exclusively with grapes from Grand Cru and Premier Cru plots of the Montagne de Reims, specifically from vineyards located in Mareuil-sur-Ay and Avenay-Val-d'Or. This wine demonstrates the expertise of the Philipponnat house, a winery with more than five centuries of history, founded in 1522 and renowned for its winemaking tradition.
The soils of these vineyards, of a chalky and clayey nature, give a particular minerality to the wine. The region's continental climate, with mild summers and rainy autumns, contributes to the development of high quality grapes. The grapes are harvested by hand, ensuring a careful selection of the best grapes.
Winemaking
Philipponnat Blanc de Noirs Extra Brut follows a traditional fermentation process to avoid premature oxidation. A partial malolactic fermentation is carried out in vats, whereas wine fermented in oak barrels does not undergo this stage. The ageing, which lasts between five and seven years on the lees, gives it great complexity and brings out the secondary and tertiary aromas typical of this method. The extra brut dosage is 4.25 grams per litre, which maintains a perfect balance between freshness and body.
Taste
In the mouth, Philipponnat Blanc de Noirs Extra Brut offers a creamy texture and a round taste, with notes of praline and apricot jam. The finish is fresh and persistent, with spicy hints of cinnamon and clove. On the nose, it has a fruity character, with aromas of fresh pear, almond and soft notes of pastry, which come from the partial vinification in barrels.
