Description
Pascal Doquet Le Mont Aimé Premier Cru Brut Nature is a masterpiece from the Côte des Blancs, in the Champagne region of France. This wine is made exclusively from 100% Chardonnay from the lieu-dit Le Mont Aimé, a Premier Cru vineyard located in Vertus, at the southern end of the Côte des Blancs. The soils of the vineyard are a combination of chalk, marine silex, sands and calcareous stones, which gives a very distinctive minerality to the wine. The grapes are harvested by hand at the end of September, ensuring that the grapes are picked at optimum ripeness.
Winemaking
The winemaking process for Pascal Doquet Le Mont Aimé Premier Cru Brut Nature
is meticulous. After a slow pressing of the grapes and a qualitative fractionation of the must, the wine is fermented partly in oak barrels, which adds layers of aromatic complexity. Pascal Doquet, who represents the fourth generation of the family, has adopted biodynamic techniques since 2006, respecting natural cycles and enhancing the expression of the terroir. The wine is aged for more than 12 years on the lees, a process that gives it a remarkable elegance, with a rich texture and fine bubbles. Malolactic fermentation takes place completely, which softens the acidity and gives it a rounder, more balanced mouthfeel. Finally, the dosage is Brut Nature, i.e. with no added sugar, which allows the purity and authenticity of the Champagne's flavours to be appreciated.
Taste
The taste of Pascal Doquet Le Mont Aimé is a true sensory experience. To the eye, it has a bright golden colour, with intense reflections. On the nose, it displays aromas of citrus and fresh fruits, such as green apple and pear, complemented by more complex notes of acacia blossom, almond and white flowers. The palate is fresh and creamy on the palate, with noticeable minerality from the chalky soils. The flavours evolve towards hints of ripe fruit, dried fruit and light hints of vanilla and toast, thanks to the barrel ageing. The finish is long, with a saline sensation and a lingering aftertaste that invites further enjoyment.
This Champagne is ideal to accompany aperitifs, seafood, elaborated fish and white meats, thanks to its balance between freshness, structure and aromatic complexity.
