Skin soaking for 5 days and direct pressing. Free-run fermented in oak with indigenous yeasts in 800-litre ceramic eggs for 2 weeks. Second fermentation in bottle with a minimum ageing of 4 months. Bottled unfined, unfiltered and without added sulphites.
