Description
In the heart of the Jura, where the vines seem to be in dialogue with the stone and the silence, Alice Bouvot gives life to her most intimate interpretation of Chardonnay: L'Octavin Pamina. Trained in Burgundy and Bordeaux, Alice decided to return to her roots to cultivate not only grapes, but a radically free philosophy. Since 2005, she has been making wines without concessions, without make-up, letting the terroir speak without filters. His decision to completely eliminate sulphites and rely solely on indigenous yeasts was a risky one at the time, but today it is an essential part of his signature.
L'Octavin Pamina comes from the La Mailloche plot, where vines over 40 years old sink their roots into the grey marl soils typical of the Jura. Here, the altitude and the continental climate with Alpine influences impart character: tension, freshness and a sharp minerality. Natural Chardonnay in its purest form, but filtered through Alice's non-conformist eye.
Winemaking
L'Octavin Pamina is made by hand, with rigorous selection in the vineyard. The grapes are completely destemmed and ferment spontaneously with their wild yeasts. Alcoholic fermentation takes place slowly for 18 months in oak barrels, without racking or additions. The wine is aged on its fine lees, developing texture, depth and elegant oxidative complexity. It is not filtered, not clarified, and no sulphur is added. It is only bottled when ready, guided by intuition rather than analysis.
Taste
L'Octavin Pamina is a wine with an emotional texture. On the nose it displays a restrained universe: dried citrus, crisp green apple, lemon peel, but also a deeper background of toasted hazelnut, salted butter and brioche bread, revealing its controlled oxidative ageing. There is a vibrant tension reminiscent of the great Jura whites, but with a dancing lightness.
On the palate, L'Octavin Pamina is direct, sharp, with precise acidity acting as a backbone. The minerality is almost tactile: flint, chalk, sea salt, enveloping the fruit with an air of purity and verticality. Notes of salted caramel, grapefruit peel, a touch of umami, elevate the long, saline finish. It is a wine for those seeking excitement and risk, rather than comfort.
L'Octavin Arbois Pamina is not for everyone. It is a natural Chardonnay from the Jura, which speaks softly but leaves its mark. A work of terroir that is free, vibrant and honest. Ideal with mature cheeses, roast poultry or simply in silence, for those who know how to listen to a wine that needs no frills to move.
