The single-vineyard Macabeo 2022 El Tòfol comes from a plot they own in the lieu-dit of Font Jui in the village of Sant Sadurní d'Anoia, their other white from their own vineyards. It's from 1.1 hectares planted in 1969 at 200 meters above sea level on limestone, clay and silt soils, worked organically and biodynamically but without mentions on the label. It started fermenting in stainless steel with indigenous yeasts and finished in used 500-liter barrels, where it matured for nine months with bâtonnage. It has a moderate 11.5% alcohol and very good freshness and acidity, with amazing parameters—a pH of 2.95 and 7.27 grams of acidity (tartaric acid). It has a vibrant palate with lively acidity and almost effervescent flavors and is pungent and surprisingly fresh for the very warm and dry year. These are the first grapes they harvest to keep the acidity from the Macabeo. 3,802 bottles produced. It was bottled in June 2023.

L'Enclòs de Peralba El Tòfol is an exceptional wine that reflects the passion and knowledge of Leo and Roc Gramona, cousins and members of the renowned Penedès sparkling wine dynasty. Launched in 2017, this project focuses on making single plot wines, using local grape varieties to express the microclimate and terroir of each plot. El Tòfol, one of their most outstanding creations, is a clear example of this philosophy.

Winemaking

Made in the Penedés region, known for its diversity of terroirs, L'Enclòs de Peralba El Tòfol stands out for its focus on sustainability and minimal intervention during vinification. The grape used for El Tòfol is Macabeu, an indigenous Penedès variety, planted in a 1-hectare plot in 1969. This plot, owned by Leo and Roc Gramona, is cultivated following biodynamic principles, which contributes to an aromatic, well-structured and nuanced style of Macabeu.
The winemaking process begins with a manual harvest, followed by a crushing and maceration process for several hours before pressing. Fermentation is carried out with natural yeasts in tanks and then transferred to 300-litre French oak barrels where fermentation is completed. El Tòfol is aged for 9 months in these French oak barrels, with weekly bâtonnage, which contributes to its complexity and texture.

Taste

L'Enclòs de Peralba El Tòfol is characterised by a serious and balanced profile, with a remarkable ageing potential. Despite not being an aromatic Macabeo, this wine stands out for its freshness and volume on the palate. With an alcohol content of 11.5% and a low pH of 3.08, it offers a clean nose and a fresh palate, making it an exceptional choice for those looking for wines with character and ageing potential. Production of El Tòfol is limited, with only 2,300 bottles, underlining its exclusivity and craftsmanship.
