A new Mediterranean white from Envínate, the 2023 Linit was produced with Pardilla (also known as Marisancho) grapes from old vines in Almansa but, like the majority of their wines, is sold without appellation of origin. The whole clusters were pressed, and the juice fermented in concrete where the majority of the wine matured, but a small portion was put into 350-liter oak barrels for eight months. It's pale, clean and floral, with white fruit and aromatic herbs, subtle and elegant, expressive and with a sense of purity. It has contained ripeness and alcohol (12.5%) and a balanced mouthfeel; it's tasty and clean, with a faint bitter twist in the finish and a chalky sensation. This is a fresh and pure Mediterranean white. 4,300 bottles were filled in June 2024.

Description
Envínate Linit is a white wine made in the region of Almansa, Castilla-La Mancha, by the Envínate project, a group of four winemakers: Laura Ramos, José Martínez, Roberto Santana and Alfonso Torrente, who specialise in creating wines that reflect the character of the Iberian terroirs. The wine is made from 100% Pardillo, a white grape native to this area. The grapes come from a vineyard of centenary vines located at an altitude of 700 metres above sea level, in clay soils with abundant surface pebbles and chalky soils.
Winemaking
The grapes are harvested by hand and pressed directly. Fermentation is spontaneous with indigenous yeasts in concrete tanks for a period of 10 to 15 days, without temperature control. Part of the wine is aged in 350-litre neutral barrels, where it also undergoes malolactic fermentation. The wine rests for 8 months in barrels and concrete tanks before bottling without fining or filtering, with a minimum addition of sulphur dioxide.
Taste
Envínate Linit stands out for its freshness and marked Mediterranean character. On the nose, it offers notes of white fruits and Mediterranean herbs, while on the palate it has good volume, balanced acidity and a pleasant, lingering finish.
