Free-run alcoholic fermentation with indigenous yeasts, with whole bunches and 1-week maceration. Aged between 1 and 3 years in used French oak barrels. Before bottling, three vintages are blended to obtain this wine. Bottled unfined, unfiltered and without added sulphites.
Description
Jean Marc Dreyer, from his winery in Rosheim, Alsace, has made respect for the terroir and minimal intervention his credo. Dreyer Tri Aux Auxerrois was born as a radical idea: to blend three different vintages of Auxerrois - a little-understood variety of the Pinot lineage - vinified separately and matured under veil, without filling the barrels, which allows for a slight oxidative development. The aim: to extract layers of complexity impossible to achieve in a single vintage. In the chalky, clay soils of the Lower Rhine, where the vines cling between stone and mist, Dreyer farms according to biodynamic principles, allowing the soil to shape the character of the wine. In one particularly wet vintage, he refused to bottle an entire vintage, reaffirming his unwavering commitment to purity.
Winemaking
Each vintage that gives rise to Dreyer Tri Auxerrois is macerated with skins for several days, seeking texture without over-extraction. Fermentation is spontaneous, without additives. The wine then rests in old oak foudres, without racking or sulphur additions, and without filling the barrels, developing a thin layer of veil that adds aromatic complexity. Before bottling, the three vintages are blended: a wine of time rather than technique, bottled without filtering or fining.
Taste
Visually cloudy, deep golden. On the nose, Dreyer Tri Aux Auxerrois unfolds slowly: ripe apple, quince, dried citrus peel, dried flowers and a subtle nutty note. On the palate, the texture is crisp, with saline tension and vibrant acidity balancing the light oxidation. Notes of white fruit, herbal tea, raw almond and orange peel intertwine with an almost stony mineral background. The finish is dry, long, with a delicate bitterness that invites the next sip. Dreyer Tri Aux Auxerrois is not an indulgent wine, but one for those who seek liquid truth, without make-up. Ideal with cured cheeses, white fish or as a meditation wine.
