Description
Mansano wine is a white wine macerated in skins that stands out for its excellent freshness and good body. It is made from the white Sauvignon Blanc grape variety from vineyards located at an altitude of between 500 and 700 metres above sea level.
Winemaking
After the grapes are received at the winery, they are lightly crushed and destemmed and the must is placed in stainless steel tanks. Spontaneous fermentation begins there with indigenous yeasts and pumping over during the first few days of fermentation activity. The must macerates with the skins for 3 months and is then transferred to another steel tank to finish with 8 months of ageing on the lees. The total annual production is 3,800 bottles.
Taste
Mansano has a somewhat funky profile with plenty of reductive notes. On the nose, aromas of flint, match head, nail polish, grapefruit, tangerine, floral notes, blackcurrant, jasmine and minerals are very present. On the palate, it is medium-bodied with medium acidity.
