Description
In the heart of the Vallée de la Marne, among rolling hills and a landscape marked by the murmur of the river, a champagne is born that bears the personality of its land: Delalot Meuniers d'Exception Impressions.
This is the reflection of a small artisanal maison, Champagne Delalot, which under the vision of Jérôme Lefevre, has opted for a philosophy of winemaking that is respectful and minimally interventionist. Everything revolves around a clear concept: letting the vineyard speak for itself.
There is no artifice in Delalot Meuniers d'Exception Impressions. This Blanc de Noirs, made from 100% Pinot Meunier, comes from a unique plot, Les Boulards, planted in 1971. It is a vineyard with history, worked according to organic principles, where the vigneron treads the soil with the same delicacy with which he cares for his vines. No heavy machinery: just expert hands and, when necessary, the help of horses to avoid compacting the soil.
Winemaking
In the winery, patience is key. Fermentation is spontaneous, relying on indigenous yeasts that provide a unique identity. The wine rests for 16 months in wooden barrels before bottling, where it will continue to evolve on its lees for a further 18 months. It is a slow process, but this is how great champagnes are made: unhurried, letting time do its work.
