Description
Clos Dominic Vinyes Baixes is a red wine made from Cabernet Sauvignon, Merlot, Picapoll, Garnacha Tinta and Cariñena grapes by the Celler Francisco Castillo winery in the D.O.Q. Priorat. Priorat.
Clos Dominic Vinyes Baixes comes from a total of 7 hectares of old vines planted in the lower part of the estate. These vines are located at an altitude of 430 metres above sea level and are between 60 and 100 years old.
Elaboration
The grapes are carefully harvested and selected. Once the Clos Dominic Vinyes Baixes grapes are harvested, they arrive at the winery in less than 3 hours ready to begin the vinification process. It is macerated for a month and fermented spontaneously with indigenous yeasts in stainless steel tanks.
The wine is then aged for 16 months in French oak barrels. Finally, it is gently filtered, bottled and left to settle for a few months before being released onto the market.
Taste
Clos Dominic Vinyes Baixes is a white wine with fruity aromas and spicy notes. In the mouth it is intense, fresh and elegant. It is fruity with a very pleasant acidity. It has a long and persistent finish.
