The sparkling wine Can Ràfols dels Caus Clímax Rosé Brut Nature is a genuine example of varietal expression, presenting itself as a sparkling wine that is both carefree and complex at the same time. This wine is made from a single varietal, 100% Pinot Noir.
Winemaking
Can Ràfols dels Caus Clímax Rosé Brut Nature begins with a gentle crushing, followed by direct pressing without maceration. The first fermentation is carried out spontaneously at a controlled temperature for 25 days in stainless steel tanks. Subsequently, a second fermentation is carried out in the bottle, followed by ageing in the same bottle for 30 months. This is a Brut Nature, which means that no expedition liqueur is added.
Taste
Can Ràfols dels Caus Clímax Rosé Brut Nature has a pale salmon pink colour, being expressive on the nose. Its lively aromas of red fruits, citrus and dried flowers are remarkable. In addition, the ageing notes with hints of toasted bread highlight the full-bodied mouthfeel. It is a subtle wine, with a chalky background and a fresh, slightly saline finish. Ideal food pairings include garlic prawns, seafood and strawberry-based desserts.
