The Saves NV Extra Brut Disg. 11/2012 – an all-Bouzy (hence, “grand cru”) affair featuring 25% Chardonnay – spent nearly five years on its bottle lees (80% of it being from vintage 2007), yet still emerged lemony-bright and sharp as a tack. Piquant walnut and citrus pip along with musky bite of rose radish all further invigoration in a sustained finish, and there is a polished texture here that can only be achieved through long-aging. Hints of honeysuckle and lily-of-the-valley add allure to what – while not the most complex examples of its genre – is bracingly ultra-dry, long-finishing, and harmoniously high-acid Champagne that will likely prove fascinatingly versatile at table over at least the next couple of years.

Description
Camille Savès Grand Cru Extra Brut champagne comes from the Bouzy Grand Cru region. This wine is composed of 75% Pinot Noir Bouzy Grand Cru and 25% Chardonnay Bouzy Grand Cru, from approximately 12 different plots in the Bouzy terroir.
Winemaking
Vinification begins with a manual selection of grapes in the vineyard, ensuring optimal ripeness. The grapes are then gently pressed to extract only the best must from the first pressing. The must is cold clarified before fermenting at 18ºC, without malolactic fermentation. The wine rests on its lees for 7 months in stainless steel tanks.
The wine is aged at a constant temperature of 10ºC in the cellar's cellar. A 25% reserve wine is added before bottling, and then the wine is aged in the bottle on the lees for a minimum of 6 to 7 years before disgorging. The date of disgorgement is indicated by laser on the base of the bottle. With a dosage of 4 grams per litre of sugar (Extra Brut), this wine is a balanced masterpiece that reflects the richness and complexity of the Bouzy Grand Cru terroir.
Taste
Camille Savès Grand Cru Extra Brut has golden tones with fine, lively bubbles. Its aromas are a distinctive blend of red fruits and brioche notes. On the palate, the initial density is lightened by a lively minerality and lifted by the fruity exuberance of the Pinot Noir and the finesse of the Chardonnay. The finish is warm and silky, offering a delicious, vibrant and intense cuvée that reflects the grandeur of its terroir.
