Sweet white wine is obtained by natural methods from overripe white varieties, such as Muscatel, Semillon and Riesling, among others, so the must has a high concentration of sugars. In some cases, grapes totally or partially affected by the fungus botrytis cinerea (noble rot) are harvested for the production of sweet whites. Generally, the must is partially fermented until it reaches 7º and the fermentation is cut off by heading with wine alcohol or sulfur dioxide.
Germany is one of the producers par excellence of sweet white wines with low alcohol content (between 7.5 and 10º) and depending on whether the vintage is Spätlese, Auslese, Beerenauslese, Trockenbeerenauslese or Eiswein, the wine will be more or less sweet and acidic.
In Spain we find great examples of the Moscatel variety in Andalusia, Alicante and Penedés. Floral wines with delicate perfumes of jasmine, daisies, peach and royal jelly.
France is known for Sauternes wines made from botrytized Semillon and Sauvignon Blanc grapes where the must is fermented and aged in French oak barrels. A method of elaboration somewhat similar to that of Tokaji wines of Furmint, Muscat and Hárslevelu varieties.
