Description
Xarel-lo Pairal is a white wine that stands out as an emblem of the Xarel-lo variety. Its origins lie in the unique sensibility of Can Rafols and the chalky distinction of the Garraf.
Carlos Esteva, with his vision and passion for wine, consecrated his commitment to the Xarel-lo variety with the launch of this wine in 2000. Inspired by traditional winemaking, he chose chestnut for ageing, as well as grapes from old vineyards planted by his grandfather. The vineyard, known as El Cerezo, is located in the Massís del Garraf at an altitude of 260 metres above sea level. With an extension of 1.40 ha and an age of 70 years, the soil is clayey-limestone, shallow, with a content of up to 40% of active lime and a basic PH of around 8.
Elaboration
It is made entirely from the Xarel-lo variety. The winemaking process begins with a gentle crushing, followed by pressing without destemming. Fermentation is spontaneous and takes place in chestnut barrels for 40 days. Subsequently, the wine is aged on the lees for 6 months. Finally, the wine is aged in the bottle for 24 months.
Taste
Xarel-lo Pairal has a golden yellow colour. On the nose, it is subtle and evokes aromas of stone fruit, such as apricot and peach, complemented by wild herbs and delicate hints of almond and honey. On the palate, it is complex and agile, with tender ripe fruit, aromatic herbs and mineral hints. Good acidity adds freshness, offering a long and deep taste experience.
