Description
When you uncork a bottle of René Bouvier Bourgogne Pinot Noir, the first thing you feel is a promise: that of a sensory journey to the very essence of the Côte de Nuits. This is a Pinot Noir that does not seek to impress with artifice, but to seduce with its natural elegance.
The René Bouvier winery, with its family heritage and a philosophy of absolute respect for the land, works these vineyards with an almost artisanal meticulousness. And it shows in every glass.
The vineyards, located in the prestigious areas of Marsannay, Gevrey-Chambertin, Brochon and Fixin, are on average 40 years old and grow on clay-limestone soils that give structure and minerality to the wine. But the most important thing here is the way they are cared for. Organic viticulture, minimal intervention and almost obsessive work in the vineyard to achieve grapes of exceptional quality.
Winemaking
At René Bouvier Bourgogne Pinot Noir, each cluster is harvested by hand, with an exhaustive selection before arriving at the winery. Depending on the vintage, up to 50% whole bunches are kept in fermentation, giving the wine a refined structure and extra freshness. There is no rush. The indigenous yeasts work their magic naturally, without any major manipulation.
Ageing is a combination of oak and stainless steel barrels, with an ageing period of 14 to 16 months. The use of sulphites is minimal, and to close the cycle in an almost poetic way, bottling is carried out according to the lunar calendar. Everything is designed to respect the pure expression of the grape and its terroir.
Taste
This is where René Bouvier Bourgogne Pinot Noir shines. On the nose, aromas of fresh red fruits, such as raspberries and cherries, with a slight spicy touch. On the palate, it is juicy and vibrant, with perfectly balanced acidity and silky tannin that invites you to keep drinking. It is not overpowering, but rather enveloping with subtlety and delicious persistence.
