It is a tribute to its land, a sincere and unfussy interpretation of the Pinot Noir grown in this area of the Côte de Nuits in Burgundy. But more than a wine, it is a bottled story: that of clay-limestone soils, vineyards that breathe the fresh air of the region and vinification that respects the natural rhythm of the grapes.
Winemaking
The secret of René Bouvier Marsannay Le Finage lies in its vinification process. Depending on the vintage, around 50% of whole bunches are used, which gives structure and a more complex aromatic expression. Fermentation is spontaneous, withindigenous yeasts, allowing the wine to develop its personality without unnecessary intervention.
Ageing takes place for 12 months in oak barrels, of which only 15% are new, seeking balance and elegance rather than overpowering wood. The wine then spends 6 months in stainless steel tanks, refining its structure before bottling. The curious thing is that this process is synchronised with the lunar calendar, something that reminds us that wine, in the end, is a living being.
