Description
In the heights of the municipality of Subirats, between vineyards and Mediterranean forest, lies Can Llopart, an estate with history, character and a working philosophy based on absolute respect for the land. Here, 360 metres above sea level, where the soils are poor, irregular and shallow, wines are born that cannot be made anywhere else. Llopart Rosé Brut Reserva is a reflection of this personality: a sparkling rosé that avoids superficiality to offer something authentic, vibrant and subtly complex.
The idea of making it came from the desire to reinterpret tradition from an honest point of view. Monastrell, with its rusticity and Mediterranean soul, is the backbone of the wine (60%), accompanied by the fresh juiciness of Garnacha (20%) and the aromatic finesse of Pinot Noir (20%). In a region historically dominated by whites, opting for this profile was a brave decision, born of the conviction that the terroir could offer something different.
Winemaking
Harvesting is manual, rigorous, selecting grapes from vineyards that express stony soils and naturally low yields. In the case of Llopart Rosé Brut Reserva, a light cold maceration is applied to extract colour and delicate aromas, before a gentle whole-cluster pressing, preserving the purity of the must. The first fermentation is carried out at low temperature, in stainless steel, capturing the freshness and varietal character.
The base wine of Llopart Rosé Brut Reserva is bottled at the beginning of the year for its second fermentation in the bottle, where it will rest for more than 24 months in the darkness and freshness of the cellars. The long ageing on lees rounds off the texture and refines the bubbles. After disgorging, a moderate dosage(Brut) is added, respecting the structure and natural verticality of the wine.
Taste
Llopart Rosé Brut Reserva is the result of a pale pink sparkling wine, with onion skin reflections and very fine bubbles. On the nose, it displays notes of fresh raspberry, sour cherry, citrus and a delicate background of brioche. Everything appears discreetly, without stridency, as if whispered.
On the palate, Llopart Rosé Brut Reserva is agile , dry and tense, with a precise acidity that highlights the minerality and cleanses the palate. Crisp red fruit, a subtle herbal nuance and a slightly bitter finish that invites the next sip.
This is not a complacent rosé. It is a wine that demands attention, that elegantly accompanies everything from an aperitif to seafood dishes, and that reminds us that authenticity needs no embellishment.
