Description
The story of Victoria Pariente, José Pariente's daughter, is that of a firm decision: to return to the origins, but with a contemporary outlook. In the 1990s, when many in Rueda were betting on volume and ease, she chose the long road: to rescue her father's winemaking tradition, but taking it to another level. José Pariente Cuvée Especial is perhaps her most intimate and demanding wine. It comes from a small vineyard of old Verdejo planted in goblet on stony and sandy soils, poor in organic matter but rich in character. Vines more than 70 years old, on the Castilian plateau, beaten by the sun and cold nights, where the grapes ripen slowly, maintaining a vibrant freshness.
This cuvée is, at heart, a tribute to the know-how of yesteryear, without make-up or embellishment. A wine that does not seek to flatter, but to move. The choice of oval French oak barrels and the work with fine lees for months were Victoria's personal decisions, almost artisanal, seeking not only structure but soul. There are no shortcuts here. The Verdejo is naked, honest, without the superficial perfume to which so many anodyne versions have accustomed us. A real Verdejo.
Winemaking
The grapes are harvested by hand, selecting each bunch at its optimum ripeness. Once in the winery, the grapes are destemmed and gently pressed. The must is gravity-fermented and transferred directly to oval French oak foudres, where José Pariente Cuvée Especial ferments spontaneously with indigenous yeasts. The ageing process lasts 11 months on its fine lees, with periodic gentle battonage, adding volume without losing precision. There are no new barrels or invasive aromas: the oak is at the service of the wine, not the other way around. After this time, José Pariente Cuvée Especial is bottled without aggressive stabilisation or harsh filtering, respecting the purity of the wine.
Taste
The nose of José Pariente Cuvée Especial is complex, restrained, almost austere at first. Notes of dry hay, lemon zest, raw almond and a faint echo of hot stone. No tropical exuberance or easy perfume. What there is here is tension. A tension that transforms into pure energy on the palate: a dry, vertical entry, with a citrus trace reminiscent of grapefruit peel, the salinity of a Castilian breeze. The centre of the mouth is creamy but agile, with a marked acidity that stretches the wine to a long, mineral finish, with hints of wild fennel and bitter almond.
