An organic and biodynamic wine, the 2021 Manzoni Bianco Fontanasanta is partially aged in clay amphorae. The wine shows a brilliant appearance with creamy aromas of beeswax, dried apricot, poached pear and honey. It is slightly viscous in texture with solid fruit weight and glossy sensations on the finish. It is perfumed, pretty and ready to pair with white meat or shellfish.

Macerated on the skins for 7 days before alcoholic fermentation. Aged for 12 months in acacia oak barrels.

Description

The Foradori Fontanasanta Manzoni Bianco wine comes from the hill overlooking Trento, characterised by its clay-limestone soils. These soils lovingly welcome Manzoni Bianco, a variety that ripens at the end of September. This variety is the result of a blend between Riesling Renano and Pinot Bianco. The distinctive character of the Fontanasanta vineyards is manifested through this hybrid. It is a wine that requires patience, as it reaches its fullness at least three years after the harvest.

Winemaking

Spontaneous fermentation with indigenous yeasts and without sulphur takes place in cement and stainless steel tanks. The maceration with the skins takes place during the first 4 days. The wine then completes malolactic fermentation and ages in used acacia barrels for 7 months. It is bottled without fining or filtering and with a very small dose of sulphur . The annual production is approximately 20,000 bottles.

Taste

Foradori Fontanasanta Manzoni Bianco is a recognisable and seductive wine with a deep straw colour. Its bouquet is intense, with aromas of peach, pears, spices, flowers, honey and caramel. It also has a distinctive mineral nuance. On the palate, it starts with exceptional balance and structure. The outstanding acidity and mineral profile balance the delicate and luscious components of the wine.
