Description
At the top of the Béru hill, to the east of the Chablisien vineyard, a wine is grown that encapsulates the purity of a place and the conviction of a woman. Athénaïs de Béru, heiress to the historic Château de Béru, decided in the 2000s to bring back to life the family vineyard abandoned after phylloxera. Her approach broke with decades of conventional practices: she opted for biodynamic farming, the total absence of chemicals in the vineyard and natural vinifications that reflect with absolute sincerity the soul of the land. Thus was born Château de Béru Chablis Terroirs de Béru, a wine that is first and foremost a testament to the geological and climatic character of this unique hill.
The cuvée comes from a blend of plots located exclusively on the Béru hill, where three determining factors are present: unusual altitude for Chablis, northern location and deeply calcareous soils from the Kimmeridgian, rich in marine fossils. These extreme characteristics give the wine a vertical, precise and tense identity. In an environment where minimal intervention is the norm and respect for natural rhythms is the rule, the Chardonnay grape finds its most austere and mineral expression here, far from the technical gestures that seek to please the palate immediately.
Winemaking
The Château de Béru Chablis Terroirs de Béru is harvested by hand, with a strict selection in the field. Once in the cellar, fermentation is carried out with indigenous yeasts, without the addition of sulphites in the early stages, and without fining or aggressive filtration. The wine is aged for more than 12 months on its fine lees, in a combination of stainless steel tanks and large neutral oak foudres. This prolonged contact with the lees lends volume and complexity without blurring freshness or precision, while the mixed use of materials adds texture without interfering with the wine's mineral identity.
Taste
In the glass, Château de Béru Chablis Terroirs de Béru is initially restrained, almost introspective. With some air, it reveals notes of ripe citrus fruit - lemon, white grapefruit - green apple and a delicate scent of crisp pear. However, what really defines its character is a penetrating, almost saline minerality, reminiscent of wet stone, iodine and fossil. The acidity is firm, straight, with a tension that stretches the wine to a long, clean, dry finish. A Chablis for lovers of purity, without ornamentation, where each sip transparently reflects the pulse of a hill and the will of those who have decided to let it speak.
