Description
On the top of a hill in Chablis, where the Kimmeridgiense limestone emerges bare between the grass and the centuries-old walls, lies the Clos Béru: a walled vineyard that surrounds the Château de Béru like a protective embrace. Owned by the same family for over 400 years, the resurgence of the domaine is due to the courageous drive of Athénaïs de Béru, who has restored the vineyard to its natural vitality through certified biodynamic viticulture, without concessions or shortcuts. It was a risky decision: completely eliminating industrial oenological products, relying on the lunar cycles and the life of the soil. But the result is a wine of profound character, capable of speaking directly to the place where it was born.
Château de Béru Chablis Clos Béru is a Chardonnay monopole planted in the late 1980s on a fossil soil of Kimmeridgian limestone, at an altitude of 300 metres. This closed vineyard, a true microcosm, is planted with 41B rootstock, a demanding but high quality grape, which brings tension and elegance to the wine. The planting density reaches 6,500 feet per hectare and yields are low - between 35 and 45 hl/ha depending on the year - which favours a purer and more concentrated expression of the grapes. The viticulture is meticulous, without chemicals, with strict pruning and manual harvesting, where each cluster is selected with surgical precision.
Winemaking
The vinification of Château de Béru Chablis Clos Béru Monopole is an exercise in respect and time. The grapes are pressed slowly to preserve all their finesse. No yeast is added: fermentation starts spontaneously, allowing the identity of the site to express itself unfiltered. Ageing is long, as this wine demands: 18 months in demi-muids (600-litre barrels), where the wine breathes slowly, followed by a further year in large foudres, which provide structure without imposing itself. Finally, it rests for six months in the bottle to refine its tension and achieve perfect integration.
Taste
Château de Béru Chablis Clos Béru Monopole is a wine that doesn't shout, but moves. Its colour is faint, almost silvery. On the nose, it displays pure aromas of lemon peel, crushed stone, wet chalk and a hint of white flower. There is no exuberance, but precision and restraint. On the palate, it enters with restrained strength, marked by electric acidity and lingering salinity. You can feel the rock, the wind, the nakedness of the terroir. The finish is long, dry, deeply mineral, with echoes of citrus peel, seashell and a vibrancy that lingers long after the last sip. A Chablis sculpted in stone, made for those who seek the purest essence of a white wine without artifice.
