There's a new entry-level white 2020 Chivo, which means 'goat' in Spanish, an animal quite abundant at the El Hierro island. The wine was produced with a blend of grapes, Verijadiego Blanco, Bremajuelo, Gual (Boal), Malvasía and Moscatel, mostly from a coastal vineyard in the village of Sabinosa. The vines were planted some 20 years ago at 50 meters in altitude and 200 meters away from the sea, so the grapes have salt on their skin. The bunches were pressed directly and the juice let to settle and ferment mostly in stainless steel (the Malvasía fermented in barrel) and kept with lees for nine months, during which time it went through partial malolactic. It has a slightly hazy golden color and an expressive and somewhat irreverent nose, crushed stones and sea breeze. It has 12.5% alcohol and the usual freshness and acidity from the whites from the island and the salty/marine twist. A funky introduction to El Hierro. 4,000 bottles were filled in June 2021.

Description
Bimbache Chivo comes from a small 20 year old vineyard located near the sea in the village of Sabinosa. Situated on the windward side of El Hierro, this site is exposed and windy, receiving its humidity from the prevailing winds and groundwater from rainfall falling on the higher elevations of Pico de Malpaso.
Elaboration
The soil in which the vines grow is sandy volcanic with small amounts of clay. The grape varieties used for this wine include Diego, Bremajuelo, Gual, Malvasia and Moscatel. Cultivation is sustainable and fermentation is carried out with natural yeasts in stainless steel tanks, while the Malvasia ferments in oak barrels. Finally, the wine matures for 9 months on its own lees in stainless steel and neutral toasted French oak barrels.
Taste
Bimbache Chivo has a medium golden colour with reductive notes on opening. On the nose, aromas of pickled apple, loquat, straw and yeast can be detected. It is a fully developed, dry wine with high acidity, full body and a long finish. Notes of volcanism, sulphur and salinity are evident, along with hints of fruit such as banana and citrus. It is a wine that perfectly reflects the character of the island with a more raw and rebellious style. Undoubtedly, it is a unique experience that captures the essence of El Hierro in every sip.
