Description
Billaud Simon Chablis Grand Cru Valmur, made from 100% Chardonnay, comes from one of the four grands crus of the historic Domaine Billaud-Simon. The Kimmeridgian soils, formed 155 million years ago by marine sediments, algae and shells, leave a distinctive imprint on this chardonnay.
Winemaking
Harvesting is carried out with meticulous care, and the grapes are picked and sorted by hand before gentle pressing and traditional winemaking. Ageing is carried out in oak barrels, adding further complexity to the wine.
Taste
Billaud Simon Chablis Grand Cru Valmur presents an intense and mineral flavour profile, with predominant notes of lemon and apple. The acidity is well modulated, thanks to the malolactic fermentation, resulting in a round and slightly buttery palate. The aftertaste is long and savoury, with hints of green mango, brioche and tangerine, adding to the wine's overall charm. It is a textbook Chablis that offers a well-crafted and pleasurable experience.
