The Ca' Di Mat winery was born out of the desire to recover the old vineyards that needed care and work to return to their original beauty. These vineyards represent a great effort and dedication and also have almond trees and orchards, which have belonged to the family for generations.
This winery is considered one of the most outstanding projects in the region, which stands out with an annual production of approximately 20,000 bottles. It is a small jewel to be discovered by most wine lovers, with an ecological viticulture.
Let's get to know a bit of the history
The vision and experience is led by Curro Bareño and Jesús Olivares and the married couple Paolo Armando and Victoria, who started their story in the Sierra de Gredos. They have been considered great braves who, despite the ancient nature of the place, decided to start recovering the vineyards of the Sierra de Gredos.
This project is marked with a well-structured name with specific intentions, using the expression of the Piedmontese dialect, the original area of one of the founders. When reference is made to the word Ca' it means house and indicates the family origin that the project represents. Another of its characteristics is the word Mat, which literally translates as crazy, indicating the boldness and daring that is needed to start any project.
Vineyards
This vineyard represents twenty hectares of the estate, which is planted with a wide variety of fruit trees ranging from thirty to eighty years old. The soil is composed of a great variety of granites with little schist, all distributed in the vineyard plots.
The climate is totally continental, with rainfall and cooler winds. The old vines are bush-grown and are situated at an altitude of 800-850 metres above sea level.
These vineyards are between 30 and 80 years old and are planted with Garnacha, Albillo real and Moscatel varieties, with some vines still recovering. The whole project has been carried out with passion and sanity in order to achieve great results.
Techniques used
The red wines of Ca' Di Mat owe their surprisingly light colour to the work on each of their vines, as they are organically grown. They are lightly pruned by hand and the founders of the winery encourage high productivity by aiming for rich vines and large grapes that are not forced.
Their winemaking process is non-intrusive, with spontaneous fermentations in concrete. The maceration processes are long, approximately 90 days resulting in pale red wines.
The work is carried out in a delicate manner, where each grape is gently crushed and the must is separated by hand from the skins and stems, where the heat and power of the Garnacha gives way to a subtly aromatic and fruity juice.
Indigenous yeasts and bacteria and gentle cold maceration with whole bunches are used. They also use both old oak and cement tanks for the ageing of their wines in order to give the fruit its maximum prominence.

These wines have a limit of non-interventionist vinification, with respect, patience, hard work and the climate that accompanies it, resulting in wines at their maximum splendour. Always exposing the philosophy of searching for the delicacy, elegance and complexity of Garnacha through the granitic soils of Gredos.
