Description
The sweet wine Molino Real is an outstanding representative of the great sweet wines of yesteryear, a "Mountain Wine" from Malaga. This wine is made exclusively with the Moscatel de Alejandría variety, grown in vineyards located between 350 and 1,000 metres above sea level on Paleozoic oxidised slate slopes.
Winemaking
The winemaking technique includes the traditional "asoleo", where the grapes are left to dry in the sun, thus concentrating their sugars. The grapes are harvested in two stages: first in the vineyard and then in the "pasero". The must is extracted using oil presses with esparto mats, resulting in a long and complex fermentation process in 225-litre wooden vats. Finally, ageing takes place for 20 months in low temperature conditions, producing an exceptionally balanced and fresh wine despite its high residual sugar content.
Taste
Molino Real has a unique and distinguished flavour profile. On the nose, there are notes of bay leaf, mint and condensed milk, offering remarkable aromatic complexity. On the palate, it is surprisingly balanced and fresh, with a subtle sweetness that is not cloying thanks to the perfectly integrated 130 grams of residual sugar. This wine is a sensory experience that combines tradition and modernity, reflecting the terroir of the Montes de Málaga and the meticulous winemaking that characterises it. Only 2,000 half-litre bottles are produced, making this wine a rare and precious jewel.
