Description
Mataburro Idoine wine is a unique expression of viticulture, combining tradition and modern techniques to create a distinctive product. Made mainly from the Merlot variety, sourced from 30 to 40 year old vines planted by the father of Laurent Roger, one of the winemakers. This Merlot is complemented with a small amount of Grenache, adding complexity and character to the wine.
Winemaking
The winemaking of Mataburro Idoine begins with a five-day maceration in two tanks, a process that avoids excessive extraction of tannins and polyphenols. This approach results in a surprisingly fresh and lively wine, demonstrating the versatility of Merlot when treated properly. One of the tanks underwent a light pigeage (treading of the grapes), while the other did not, to preserve the floral aromas of the semi-carbonic maceration. Subsequently, the wines from both tanks are blended and aged in stainless steel tanks, an astute technique for handling Merlot.
Mataburro Idoine is a wine that has no additions, no added sulphites, and no fining or filtration. With an alcohol content of 12.5%, this wine represents a growing trend towards lighter red wine styles, moving away from the more robust wines of twenty years ago.
Taste
The flavour profile of Mataburro Idoine is complex and captivating. It displays notes of smoke, apple, raspberry, strawberry, cherry, pomegranate and chalk, creating a rich and varied palette of flavours. The tannins are gritty, complemented by subtle notes of tobacco and pepper. This wine is ideal for chilling slightly before serving, further enhancing its unique character and appealing flavour.
