Description
François Carillon Puligny-Montrachet Les Enseignères embodies the continuity of a Burgundian history dating back to the 16th century in Puligny-Montrachet. In 2010, after years of working alongside his brother, he decided to found his own domaine, driven by a clear vision: to express with surgical precision the soul of each parcel. Les Enseignères is one of his jewels. Situated just below the Bienvenues-Bâtard-Montrachet grand cru, this parcel, although classified as "village", produces wines with the depth and tension of a premier cru. The chalky-clay soil, the privileged exposure and the age of the vines allow a pure expression of Chardonnay, without artifice. The viticulture is sustainable, respectful, with low yields and millimetric attention to detail.
Winemaking
François Carillon Puligny Montrachet Les Enseignères is harvested by hand, with rigorous selection in the vineyard. The pressing is gentle and long, seeking elegance from the must. Alcoholic and malolactic fermentation takes place in French oak barrels, with a moderate use of new wood (15-20%). Ageing takes between 12 and 18 months on fine lees, without excessive bâtonnage, in order to preserve tension, freshness and depth. A brief time in tank before bottling finishes refining its profile.
Taste
Clean, taut, precise. On the nose, François Carillon Puligny Montrachet Les Enseignères displays refined citrus fruits - kumquat, pink grapefruit -along with a faint floral echo and hints of brioche. On the palate, the texture is satiny, with a vibrant acidity that structures and lengthens. Notes of white fruit, lemon peel and chalky minerality define the profile. The finish is long, saline, with an elegant, subtly bitter, citrus peel-like persistence. A straight-lined Puligny Montrachet that prioritises balance and purity over exuberance. Ideal for pairing with fine seafood or simply to contemplate in silence.
